Meat Loaf

Ingredients

2 lbs  80/20 ground beef (you can also substitute with ground turkey)

1/2 yellow onion

1/2 celery stalk 

1/4  green bell pepper

1 Tablespoon garlic powder 

1 egg

1 Tablespoon of worcestershire sauce

3 Tablespoons ketchup 

1 tsp salt

½  tsp black pepper

½ packet of Lipton recipe secrets soup mix

2 slices of white bread 

â…“ cup milk

1 Tablespoon of olive oil

Glaze:  ¼ C Ketchup, 2TBSP Honey,1 Tablespoon worcestershire sauce

Instructions

Pre-heat oven to 350 degrees

Place bread in a food processor until completely crumbled or shred by hand.

In a small bowl soak bread crumbs in milk for 10 minutes.   

Chop onion, celery and bell pepper into fine pieces. Heat 1 Tablespoon of olive oil and saute the chopped onion, celery and bell pepper until tender (about 3 minutes).

In Large bowl combine meat,  sautéed onion, celery and bell pepper with garlic powder, egg, worcestershire,  ketchup, salt, pepper and Lipton onion soup mix

Add soaked breadcrumbs to the meat mixture

Use hands to mix in all ingredients and shape into a football. Bake on a sheet pan or large baking dish (meatloaf bakes best in a flat pan and not a loaf pan - this leaves some breathing room, allowing the fat to drain and the edges to caramelize).   Bake at 350 for 1 hr to 1 hr 15 until internal temp is 160.  Add glaze in the last 15 minutes of cooking

Glaze:  Make the glaze in a small bowl, add 1/4 cup ketchup, 2 Tablespoons of honey, and 1 Tablespoon of worcestershire sauce. Stir to combine. Use a pastry brush to brush on top of the meat loaf during the last 15 minutes of cooking. *Let meat loaf rest 10 minutes before slicing.
