Jamaican Curry Chicken

There's nothing like some good Jamaican food.  Turn down the spice on this dish and your kids will be able to eat it and looooove it.  While travel these days is limited, this dish makes us feel like we are in Jamaica!

Grandma Francoise's Haitian Spaghetti

This dish unexpectedly combines two kid food favorites, hotdogs and spaghetti.  It's extremely simple to make, low cost and the kids will love it!  Grandma fed a lot of people with this dish!

Bonus points if you serve with ketchup!

Mofongo

​​Mofongo (pronounce mo-phone-go) is fun to say and fun to eat!  This dish, mostly considered Puerto Rican, similar dishes are made in the Dominican Republic, Cuba and actually has origins from Africa (foo-foo) where starchy vegetables such like cassava, yams and plantains are used to make a similar dish.

Easy Caribbean Red Beans and Rice

Red beans and rice use to mean soaking beans overnight and then boiling them forever until they were tender.  A good friend of mind showed me that canned beans will taste just as good and will get you your meal in less than half the time!
