Mofongo
Ingredients
3 green plantains
¼ Cup of pork rinds or cracklings *you can purchase these in the latin foods section of your supermarket or as I prefer, you can make them fresh. You can also substitute with crunchy bacon or sauteed shrimp)
4-5 garlic cloves
Salt and Pepper
3 teaspoons of olive oil
canola or olive oil for frying
Instructions
Peel the plantains, cut them into 1 inch slices
Heat oil in a frying pan on medium - high heat (make sure you have enough oil to cover the plantains)
Once oil is hot, fry the plantains in batches and cook for about 4-6 minutes, until they are golden brown and tender. Do not overcrowd your frying pan.
Remove the cooked plantains with a slotted metal spoon, and place on a paper towel to drain
Using a mortar and pestle, work in batches to mash garlic, plantains, pork, olive oil and a pinch of salt and pepper until everything is well incorporated. This will likely take 4 - 5 batches.
Shape the mixture into a half-dome shape using a small condiment bowl as a mold.
Serve with Rice, meat or seafood.
