Panko Crusted Cod with Dipping Sauce
Ingredients
1 lb cod fish
â…› tsp of salt
â…› tsp of pepper
1/4 cup flour
1 egg
1 cup plain panko bread crumbs
3 Tablespoons grated parmesan cheese
1 tsp garlic powder
¼ tsp of dry parsley
olive oil spray

Dipping sauce (4 Tablespoons of mayonnaise,1 Tablespoon honey,1 tsp yellow mustard,2 tablespoons barbecue sauce,1 small squeeze lemon juice

Instructions
Preheat oven to 425 degrees
Clean fish by rubbing half a lemon on each piece and rinsing with cold water. Then pat dry with a paper towel. Cut fish into 1 inch squares. Place fish in a bowl and season with salt and pepper.
Take out 3 shallow plates or bowls. In the first bowl, place ¼ cup of flour. In the 2nd bowl beat your egg. In the 3rd bowl mix panko crumbs, parmesan cheese, garlic powder, and parsley.
Dredge fish in flour, then dip in egg mixture, then finally in the panko crumbs mixture. Make sure your fish is thoroughly coated in each step and shake off the excess.
Use cooking spray to coat a baking sheet Arrange the fish on the sheet so they are at least 2” apart. Once arranged, spray the top of the fish lightly with cooking spray.
Bake at 425 degrees for approximately 13-15 minutes depending on the thickness of the fish.
