White Bean and Tuna salad served with shaved zucchini

Summer time is for enjoying and while I love to cook, I also like a break from the stove/oven. That's when I bring in no cook recipes like this White Bean Salad. I love it because it's got protein (the beans), more protein (the tuna), is loaded with fiber (the beans and the zucchini) and I'm getting healthy fats (olive oil). This recipe tastes good and literally makes me feel good too.
Recipe:
1 Can of Cannelli beans, rinsed and drained
1 can of Solid White Albacore Tuna in water 2 small zucchinni, thinly shaved
1/2 Cup extra virgin olive oil
1/4 cup fresh squeezed lemon juice
3 Tbsp red onion (minced)
1 Tbsp fresh thyme
1 garlic clove, finely grated
a pinch of salt and pepper to taste
Fresh dill and cherry tomatoes for garnish
Directions:
Whisk the olive oil, lemon juice, onion, garlic, thyme, salt and pepper to make you marinade.
Add in beans and Tuna, stir well.
Let marinate for 20 minutes
Prepare to plate, getting out 4 shallow plates or bowls.
Layer each plate evenly with your shaved zuchini.
Top with the bean and tuna mixture.
Garnish with fresh dill and cherry tomatoes
